This indeed does help.  And it led me to an even better solution:

I hadn't thought to look under /apps/nautilus, but rather, just under
/desktop/gnome.  So when I started looking for
/apps/nautilus/preferences/show_desktop, I stumbled across these items:

  /apps/nautilus/desktop/computer_icon_visible
  /apps/nautilus/desktop/home_icon_visible
  /apps/nautilus/desktop/trash_icon_visible

I unset all of these, thereby removing the Computer, Home, and Trash
desktop icons.  Then, I was able to simply delete the remaining icons.
And now, I have a completely icon-less desktop ... and I still have the
context menu!

So, thank you very much for your very helpful suggestion, which steered
me in the right direction.
