Cut-and-paste with 2-button mouse

Two fairly newbie questions
(I went over recently from KDE to GNOME,
for general philosphical reasons):

(1) I cannot cut-and-paste within my GNOME terminal windows,
or between these windows.
Is there some setting I have overlooked?

I'm running RedHat-7.0 with the GNOME that came with it.
I have a 2-button mouse which works in all other cases.

Eg I can cut-and-paste between xterm windows
(set up with "xterm &"),
or indeed from GNOME terminals to xterm windows.
I can also cut-and-paste from GNOME terminals to Netscape.
I take it from this that the problem is
writing the pasted text rather than saving it.

(2) Running GNOME under FreeBSD
I find the "Log out" item in the main GNOME menu
seems to have disappeared,
and it is in fact extremely difficult to logout.

Actually lots of things are wrong with the GNOME setup
under FreeBSD (4.2) but this is the most annoying.

Any suggestions or advice gratefully received.
