Unfortunately, I don't do much but look at pretty simple PDF's and just pick out the text. For example, just before I saw your question, I downloaded the PDF manual for my Cuisinart tea kettle and looked for their steeping chart. I just hit F7 to enable carret browsing mode and then I just down arrowed through the document. I was able to select the text I wanted, with the shift arrow keys, and then copy it into a text file. Sorry I'm not of more help.
