The *body* seems to work, as it is still
Content-Type: text/plain; charset=ISO-8859-1
Content-Transfer-Encoding: 8bit
but the from: header gets even stranger on your reply; now I see

here, which seems to include some non-printable chars, as the cursor refuses
to go behind the char marked with the "^". BTW, the raw header line now reads
To: Albrecht =?utf-8?B?RHJlw4PCnw==?= <albrecht.dress@arcormail.de>
See the difference to the utf-8 "solution" above?!? Needs a fix, I guess...
