Gdk, Gtk: Regenerate docs.xml and .defs files
and update gtk/src/gtk_signals.defs.patch.
* gtk/src/gtk_docs_override.xml:
Add a substitute_enumerator_name element.
* tools/extra_defs_gen/generate_defs_gtk.cc:
Add GTK_TYPE_EVENT_CONTROLLER_[KEY|MOTION|SCROLL].
