Ok, here's what I did to fix it (just for archival purposes).
I tried the inotify flag, and it crashed gnome with the ubuntu 2.6.10-4 kernel.
So I booted with 2.6.20-3, and it worked great. Thanks for the help everyone.

Trow just checked in a fix for this to CVS; you definitely are not
running inotify.

(You can check by doing "dmesg | grep inotify")
