The env vars inspected by glib and gtk+ are documented at

these lists should be complete up to glib/gtk+ 2.2. For the 2.4
additions (I only remember G_FILENAME_ENCODING), you'll have to look at
the 2.3.x api docs, which aren't available online yet.
