Yan,
I've not yet played with my BT headset a ton, so can't help you much (yet).
I did try it out in ubuntu 9.04, and didn't get very far, while I could get the BT headset to work briefly in sound recorder, I never managed in Ekiga (and the functionality in sound recorder was brief and unstable at best).
I'm now running the alpha 4 of karmic which, I'm told has much improved BT support, will let you know how it goes if I can get it to work well outside of Ekiga.

Unfortunately I'm stuck with a 2.6.28 kernel. From what I can puzzle
out of your HOWTO, it involves bluetooth-alsa; it won't build right now.
Oh well, I'm going to try to find a wired USB headset.
