You need to change the default application GNOME uses for opening PDF
documents.
I'm only aware of one way--Nautilus:
1. Open Nautilus (that's the filebrowser in GNOME)
2. Find a PDF file and bring up the context menu for it (right-click),
then choose "Propertis" it at the bottom most of the times.
3. Go to the "Open With" tab and select another application. (You might
have to manually add more applications to the list.)
4. Choose your favourite application.
That's it.
