evolution/e-util/e-html-utils.c contains some functions to convert plain
text to HTML. That HTML is then passed to the GtkHTML display widget
which renders HTML and thus allows you to click on urls. The url-clicked
callback handler is in evolution/mail/mail-display.c which I think is
called on_url_requested() or some such.
