[Evolution] Adding/modifying keyboard shortcuts in 2.30+?

So, not too long ago, the procedure documented in the Evolution FAQ[1]
for modifying keyboard shortcuts worked fine (although it was irritating
to have to re-do it every time a new distro package was upgraded).

Now that I've upgraded to evolution 2.30 though, the .xml files for
defining the menus/toolbar no longer exist.  How does one go about
changing (or more importantly, *adding*) keyboard shortcuts now?
