I've decided to upgrade from 3.4.4 to 3.10 and these are my steps so

1 - make backup of Evo emails files etc in program
2 - downloaded from Evo site current stable release
3 - saved to Home/chris/evoupdate
4 - In terminal ran command .configure with no other detail - does
this need a file ref??
5 - In terminal ran command sudo make install - no other detail...

Error - *** No rule to make target `install'
Can you see what the problem is and if I'm doing this correctly or
recommend corrections please?
You missed a step between configure and make install:
https://en.wikipedia.org/wiki/Configure_script#Usage
Plus not sure which distribution and distribution version you try this
on, so I cannot say anything about other dependencies which might also
require updating.
Assumed you should use a distro that does use RPM or DEB packages, then
you could run checkinstall instead of make install , this often can
build a package, even if you shouldn't know how to build packages
yourself. FWIW, checkinstall doesn't help you regarding to dependencies,
you still need to check out this on your own.
