Does the post-install bit look like this:

post-install:
    @install -d $(sysconfdir)/gtk-2.0
    @$(bindir)/gdk-pixbuf-query-loaders > $(sysconfdir)/gtk-2.0/gdk-pixbuf.loaders

(Tab at the start of the line, not spaces.)
