Paolo helped me a bit on IRC, the logs are actually on the systemd
journal:

$ journalctl -a | grep -i gedit

There is probably a better way to get only gedit messages.

Yes, ~/.local/share/gedit/ and ~/.cache/gedit/ (if it exists).
