Hmm, yes, the API-reference is incomplete...

The source is documentet quite well, so you can look at
http://cvs.gnome.org/lxr/source/gnome-libs/libgnomeui/gnome-canvas-rect-ellipse.h#22
for the arguments available on a ellipse-canvas-item.

The construction of an ellipse-item is similar to the rectangle example in
http://developer.gnome.org/doc/tutorials/gnome-libs/gnomecanvas-widget.html
