One thing that I can propose is to review the GNOME User Documentation
topics and mark the pages as "final" when appropriate. This would
greatly help the translation effort to know which topics can be
translated and which ones are still a work in progress. Then working
on non final pages would be great, it is to my point of view a quite
high priority to finalize the user documentation.
Overall on the wiki, you might have already found the starting point
at https://live.gnome.org/DocumentationProject
Shaun is the Documentation project leader, he can certainly tell you better
