It's simply the ability to save and use multiple sessions,
where a session is the information required to re-start
applications as they were when the session was terminated.
One common use of multiple sessions is to have different
sessions that you can restore on different displays;
this automatic selection of a display-specific session
needs to be done in the desktop session manager (gsm).
A knowledgeable user could create multiple sessions
simply by making ~/.gnome/session a symlink to
a session file, though it's non-intuitive.
One slight bug-ette with GNOME's session-management is that
it stores both session and configuration information in the
same directory. Other ICCCM-compliant session managers
(such as the one in CDE) use a separate sessions directory
hierarchy, which keeps per-process session files (such as
gnome-terminal-B_aaqk) in a per-session directory under the
desktop's sessions directory.
