Get in touch with Spanish translation team: they should be able to
direct you in how to help, and I think there're already translators
for Spanish working on documentation.
FWIW, I believe the preferred way of translating documents would be
PO files instead. Look through
http://lists.gnome.org/archives/gnome-i18n/
http://lists.gnome.org/archives/gnome-doc-list/
and search for xml2po if you need discussions about the tool I hope
will help you there, though it's very simple to use if you're
familiar with Gnome docs system (DocBook et al), and README should be
sufficient.
