The first thing you should do it try to get in contact with Christophe
Merlet, the French GNOME translation team leader, listed
at http://developer.gnome.org/projects/gtp/teams.html
Christophe should be able to direct you to any needs of the French
translations.
The current stats for French in GNOME (User-Interface) are
http://l10n-status.gnome.org/gnome-2.16/fr/index.html
In addition, at http://bugzilla.gnome.org/browse.cgi?product=l10n
there is small list of bug reports for the French translations that need
some attention.
