The frequently used word is 'message' in Evolution not 'mail'.
Why did you replace 'message' by 'mail'?
Because this is the smaller problem if the preferences screen doesn't
fit on your desktop because of long strings. ;-)

These kinds of hacks are sometimes a necessary evil in a fixed-width
big-font non-scrolling console, but if the text doesn't fit into a
graphical window on your particular screen with your particular
preferred font with your particular resolution with your particular DPI
setting, making the message 2% shorter is the wrong solution. Making the
window resizable and/or auto-breaking the text is the correct solution.
Rephrasing the text may sometimes work, but not by ignoring the
established rules of terminology.
