Right-click on the workspace switcher and go to preferences; change the
number of rows.

Weird. I'm not sure. I know it works for me. :-/

Applications->system->Gconf-editor, then set
/apps/nautilus/preferences/show_desktop to false. (If the key doesn't
exist, create it.)

If you open Desktop Preferences->advanced->sessions, set Nautilus to not
restart.

I believe the menu panel cannot really be customized. For other panels,
though, it's in the preferences dialog. (Right-click->preferences.)
