Kent,
I'm trying to modify the menu as well for all my users. Here's what I
found:
1. /etc/X11/desktop-menus/application.menu
Describes the structure of the menu layout
2. /usr/share/desktop-menu-files
Contains the .directory files for the menu entries in
applications.menu
3. /usr/share/applications
Contains the .desktop files for the menu items.
I haven't found out how to provide my own .menu file instead of
modifying the application.menu.

Sorry if this is a repeat question but the archive search doesn't work.
Editing as you suggest always yields "*** cannot be moved to the Trash.
Do
you want to delete it immediately?" and, after clicking "Delete", to
"Error
"Unsupported operation" while deleting "***" where the *** I inserted
stands for the selection. I tried deleting applications/Network Servers
and
/Games.
Did someone find the files? As su I could at least get things cleaned up
from the command line.
