Hello Chuck,
I would recommend getting familiar with Gnome code/building first,
building gnome 2.0 might be a good starting point.
The best way to start is with simple bug fixing, there are a lot of bugs
in bugzilla and some of them fall easy/trivial category. Even when not
technically challenging they are a good way to get familiar with GNOME,
building, how things work, etc.
You should start by reading Havoc's "Working on Free Software":

- search for your bug, find it, fix it and send a patch is the short
answer.
About which project to work on, work on something that interests you.
Working on a project with a good maintainer is also a good idea.
