Reading your message below I am not sure what you are expecting and what you are indeed observing. Gnome-print does not handle even/odd page margin adjustments. That's basically up to the application (evince in this case). For applications that use the standard gnome-print printing commands (I doubt that evince is one of them. Try gnumeric with a duplex capable printer.) gnomeprint will ask the printer to print duplex.
