There are two separate things involved here. The Default Applications setting should just determine what application is opened when clicking on a calendar link. I'm afraid I don't know how you'd go about getting your version of Thunderbird recognized here.
The gnome-shell calendar dropdown will fetch calendar info from any supported accounts you've configured in gnome-online-accounts. So if you're using google (gmail) for your calendar, set up your account in the Online Accounts settings tool, and be sure that the Calendar option is toggled "on". I believe this does use the evolution-data-server library, but it does not require the full evolution application to be installed.
