I think that mplayer badly names YUV2... The real format name in the
video4linux API is YUV422. 

To answer your question, all options can be changed using gconftool-2 or
gconf-editor (a better GUI), even when GnomeMeeting is running.
GnomeMeeting will then take the appropriate action. That is very
convienent for remote control. (Imagine your girlfriend doesn't know how
to change an option, you can log in her machine and run gconftool-2.).

All options are described in gnomemeeting.schemas, installed in
/etc/gconf/schemas. But using gconf-editor is easier :)
