please let us know which dialogs cause you grief. There are only very few truely modal dialogs in Gnumeric. Most only block the associated spreadsheet window.

I am not sure how much I would use multiple windows for one sheet, but I am sure it would be very useful to some people. EG: Manipulating a multi sheet workbook on a dual head display. You could have one sheet selected on one display head, and be referring to it while entering a formula on a different sheet in the same workbook on a different window on the other display head. Is this worth an enhancement request bug on bugzilla?
