e.g.:

  GtkWidget *wid = gtk_check_button_new_with_label("The initial text");
  /* ... after a while ... */
  gtk_label_set_text(GTK_LABEL(GTK_BIN(wid)->child), "The NEW text!!");

WARNING: not tested, but should work...
