I run the GUI session, almost exclusively, on a netbook with an Atom cpu
and a gig of ram; it's plenty fast. with Ubuntu 11.10. This is what
I'm using, and it's faster than earlier versions of Vinux on this machine.

In this situation I would install Debian, choosing only the essential
packages during the installation process. I would then boot the new system and
start installing only the packages that I needed.
Arch Linux should also be flexible enough to allow you to do this.
I would also suggest working primarily from console sessions rather than from
a GUI, and trying out alternatives to Gnome such as XFCE, accessibility to
which with Orca is said to be improving.
I have fast machines with a lot of memory, but I still prefer to work
primarily in console sessions. I only run X when I need Firefox or some other
GUI application.
