Hi Brandon,
First, a couple of key points. One you say Vinux is way out of date.
That's not necessarily so. Vinux 4 was based on Ubuntu 12.04 LTS which
still gets regular updates for desktop and server versions so it isn't
as out of date as you might think. Two, servers aren't updated as
regularly as desktops therefore it is not always recommended to run
the latest and greatest if one is running a server. There are a number
of cases where updating a server too often can cause problems so point
being if you want a server you should not be too concerned about
running the latest packages here if you want a server.
Now, to answer your question more directly my recommendations would be
Ubuntu 14.04, Fedora 22, or Sonar. All of them have a decent package
repository, are fairly up to date, and are fairly easy to get up and
running with accessibility. So one of those is where I'd personally
start if I were you.

CentOS also.
I see Sonar is more updated than Vinux, how would it be for my
situation? I would be using it at first in a VM, but would hope to move
it to a partition if I liked it enough.
