OK, would you consider a slightly more complex one-time installation
process? There a ways to install a lot of distributions from a running
system. A basic installation would be enough to boot the new distro and
then install and configure further packages. There used to be quite good
guides for that process for Debian and Ubuntu.

On another line of inquiry, there are live systems based on Ubuntu and
others with accessibility support. It depends though how easy it is to
get the rolling release branch (testing) set up for installation.
