You don't, as it's systemd-coredump that creates those, not Shotwell.
A core dump is, in short, a dump of the program's memory (which used
magnetic core technology in the 70s, hence the name) at the time of
crashing, created for debug purpouses.
You can safely delete them, unless you want to play coroner on them.
See the documentation for systemd if you don't want them to be created
in the first place, *probably* you could achieve that by editing
something in /etc/systemd/coredump.conf
However, if Shotwell is crashing frequently enough to produce 15GB of
dumps, I guess that might be worth investigating.
