I think that Preferences best fit somewhere in the middle... one seldom
touches preferences, so there's no need to have Lock Display and Log Out
harder to find.

Maybe:

Applications               Desktop
============               =======
Accessories >              Run Program...
:                          Search for Files...
:                          Take a Screenshot...
:                          -----------------
:                          Preferences > 
:                          -----------------
:                          Lock Display
:                          Log Out

I think I have seen this before on this list, and I'd rather support
that.
