Turns out that I was incorrectly (read: not at all) enabling gtk-doc,
which explains many of these failures. With gtk-doc turned on and some
tex deps installed correctly, 'make distcheck' works on all gtk deps
except libxml2/libxslt and fontconfig. By tomorrow morning I guess
we'll know how the full stack does.
