I haven't installed gnome-shell, I directly edit the menu files in
/etc/xdg/menus and /usr/share/desktop-directories and
/usr/share/applications to change the desktop menus.
Usually I can find all relevant menu files to hake changes, but I
could not locate which menu file define the top left "Applications"
icon. It is seems in a special gnome menu files, appreciate anyone
could help as we install the gnome on virtual machine and would like
to change "Applications" icon.
