Yes they are POP accounts
by doing so, I assumed they will go on a 'White list' and next time I
get an email from the same sender, it will go into the 'Inbox' alas
every single email keeps on going into the 'Junk' folder??

I don't think that SpamAssassin relies on simple allowlists based on
alleged sender addresses only...

The only Junk settings I can find are on the 'mail preferences' tab
and
I have ticked: 'Check incoming messages for junk' 'Do not mark
messages
as junk if sender is in my address book' 'check custom headers for
junk' (containing: X-Spam-Flags = Yes, X-Spam-Level = *****) and
under
SpamAssassin Options I tried with and without 'Include remote tests'
with no difference.

Have you checked if those custom headers exist in those messages ending
up in a Junk folder?
I checked the headers but could not find X-Spam anywhere
