You need to identify which process(es) are leaking memory. Start GNOME
fresh and do 'ps wwwaux' and capture it to a file. When your swap
starts thrashing, do another 'ps wwwaux' and compare the two for
inflated process sizes. The usual suspects are: your X server, your
window manager, Netscape (if you leave it running for a while).
Personally I also find gtop very useful for this, in addition to just
ps.
