Making XTerm the default for "Run in Terminal"

For any menu entry or panel launcher, you have the option of making the
application run in a terminal. I don't like gnome-term, because I don't
know how to configure it globally the way you can configure Xterm (i.e.
using ../app-defaults/XTerm). I used to have XTerm as the default
terminal for "Run in Terminal," but while upgrading to Mandrake-7.1 it
got reset to gnome-term. Now, I can't remember where to set this up.
Why isn't this choice available in the gnome configuration menu?
