Hi Ralph,

just have a look at Settings->GnomeControlCenter->Sawfish window 
manager->Workspaces. There you change the columns and rows how you like.
I'm using gnome 1.2 and the sawfish window manager. May this hint is 
obsolet if you use another gnome version or window manager.
