Since Evolution ist still Gnome 1.4-based, its settings can't be changed
with the Gnome 2.x config tools which you have on RH. Don't know if RH
still comes with gnome-control-center for Gnome 1.4. In any case, you an
edit the file /home/<you>/.gnome/Gnome. Here's mine:

man-show=yelp "%s"
ghelp-show=yelp "%s"
http-show=galeon --new-tab "%s"
https-show=galeon --new-tab "%s"
ftp-show=gftp "%s"
mailto-show=evolution "%s"
Simply substitute 'mozilla' for 'galeon --new-tab'. Note, however, that
since mozilla is not a Gnome app, it won't pick up the mailto-show=
setting. Instead the browser always opens mailto: links with
mozilla-mail. There's currently no solution for that except using a
Gnome browser like galeon
