Check the documentation (on a RH system):

/usr/share/gnome/html/gnome/gnome-gnome-mime-info.html
/usr/share/gnome/html/gnome/gnome-gnome-mime.html

Or, if you installed this yourself:

$prefix/share/gnome/html/gnome/gnome-gnome-mime-info.html
$prefix/share/gnome/html/gnome/gnome-gnome-mime.html
